Dried chile ancho is one of the most popular peppers in Mexico. Fresh called Poblano Chile Pepper but dried it is known asAncho chile. Matured they have a dark-green to reddish brown color and can be used at any time.
Poblanos are relatively varied mild in flavor and have a mellow flavor which makes them very popular for use in moles, salsas and powderd form. The peppers are often filled in Mexico or fried and added to tomato and egg dishes. They are much in 'mole sauces "(chocolate sauce with peppers) used. These peppers are classified as mild.
