Mole is derived from the Nahuatl: Mulli or Molli which loosely translated "sauce" or "concoction" means. Mole is a Mexican sauce thick homogeneous sauce which is primarily served with chicken and beef. The basic recipe is from the pre-Columbian times and was used by the Maya, Aztec and Tarascan.
The main ingredients of mole are Chile peppers (ancho) combined with chocolate, garlic, cloves unsweetened peanuts, tomatoes and onions. There are thousands of variations of this recipe including variants with cinnamon, coriander and raisins. The color of the sauce chocolate brown varies between red, green and even yellow. The states of Puebla and Oaxaca are the most popular Mexican states where the Mole is prepared. Oaxaca is also known as the land of seven Mole.
