Corn Soup - Pozole

Pozole (corn soup), which dates from the time of the Aztecs. The corn for this soup is prepared according to a special process called nixtamalisation which makes a distinct flavor. Another name for pozole is Maiz cacahuazintle which ultimately resists for corn soup.
