Nixtamalization typically refers to a process for the preparation of maize (corn), or other grain, in which the grain is soaked and cooked in an alkaline solution.
Maseca corn flour, according to all Mexicans the only real type of flour to make tortillas. Note Of course there are other good flours but for most Mexicans, this remains yet the product to make authentic tortillas with.
