Corn, is the main ingredient of tortillas, original tortillas go through special process what is called in Spanish "nixtamalización".
It goes through a treatment before it to tortilla dough (masa) can be kneaded.
Corn contains no gluten, this is in contrast to other cereals such as wheat. One adds water and salt to the corn (nixtamalisacion), after which that is cooked. Then everything will be rinsed with clean water. Through this process it has been found that niacin (vitamin B3) is released, causing the iron uptake is promoted. The fermentation of the corn also promotes the growth of certain micro-organism which bind the nitrogen from the air, which, as it were, a biological protein factory. The processed corn is called "nixtamal", the process is called nixtamalizacion.
